    Restaurant and hospitality fit-outs require specialist knowledge of commercial kitchen extraction systems, grease traps, fire suppression systems, and Environmental Health Officer (EHO) requirements. The kitchen extraction system alone — from canopy through ductwork to roof discharge — must comply with DW/172 for ductwork specification and provide adequate air change rates for the cooking equipment installed.
